Ingredients

  • 3 cups Broccoli florets
  • 3 cups Cauliflower florets
  • 2 cups Carrots, thinly sliced
  • 4 tablespoons Butter
  • 3 tablespoons All-purpose flour
  • 2 cups Milk
  • 2 cups Sharp cheddar cheese, shredded
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 0.5 teaspoons Garlic powder
  • 1 cup Italian-style breadcrumbs
  • 0.5 cups Parmesan cheese, grated
  • 2 tablespoons Olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.

Step 2

Bring a large pot of salted water to a boil. Blanch the broccoli, cauliflower, and carrots for 3-4 minutes until slightly tender. Drain and transfer to a bowl of ice water to halt cooking, then drain again and set aside.

Step 3

In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes to form a roux.

Step 4

Slowly whisk in the milk, stirring constantly, and cook until the mixture thickens, about 5-7 minutes.

Step 5

Stir in the cheddar cheese until melted and smooth. Season the cheese sauce with salt, black pepper, and garlic powder.

Step 6

Place the blanched vegetables into the prepared baking dish and pour the cheese sauce evenly over them.

Step 7

In a small bowl, mix together the breadcrumbs, Parmesan cheese, and olive oil until evenly combined.

Step 8

Sprinkle the breadcrumb mixture on top of the cheesy vegetables.

Step 9

Bake the casserole in the preheated oven for 25-30 minutes or until bubbling and the topping is golden brown.

Step 10

Remove from the oven and allow to cool slightly before serving. Enjoy your California Vegetable Casserole!
