Rinse the sushi rice under cold water until the water runs clear. This removes excess starch for clearer rice grains.
Combine the rinsed rice and water in a rice cooker, and cook according to the manufacturer's instructions.
While the rice is cooking, mix the rice vinegar, sugar, and salt in a small bowl until dissolved.
Once the rice is cooked, spread it evenly in a large bowl and gently fold in the vinegar mixture. Allow it to cool to room temperature.
