Ingredients

  • 4 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 3 medium Leeks (white and light green parts only, cleaned and sliced)
  • 2 Garlic cloves (minced)
  • 4 cups Yukon gold potatoes (peeled and diced)
  • 5 cups Chicken or vegetable stock
  • 1 cup Heavy cream
  • 1.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 1 teaspoon Fresh thyme leaves (optional)
  • 2 tablespoons Chives (chopped, for garnish)

Directions

Step 1

In a large pot, heat the butter and olive oil over medium heat until the butter is melted and foamy.

Step 2

Add the sliced leeks and sauté for 6-8 minutes, stirring occasionally, until they are soft and translucent. Avoid browning them.

Step 3

Stir in the minced garlic and cook for 1 minute, until fragrant.

Step 4

Add the diced potatoes to the pot, followed by the chicken or vegetable stock. Bring the mixture to a boil, then reduce the heat to low and simmer for 20-25 minutes, or until the potatoes are very tender.

Remove the pot from heat and use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer the soup in batches to a blender and puree until smooth.
