Ingredients

  • 2 pieces chicken breast
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 0.5 teaspoons salt
  • 0.5 teaspoons black pepper
  • 4 pieces large flour tortillas
  • 2 cups frozen French fries
  • 1 cup shredded cheddar cheese
  • 1 cup guacamole
  • 0.5 cup sour cream
  • 0.5 cup salsa
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes

Directions

Step 1

In a small bowl, whisk together olive oil, lime juice, garlic powder, ground cumin, chili powder, salt, and black pepper to create a marinade for the chicken.

Step 2

Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over them. Ensure the chicken is well-coated and let it marinate for at least 15 minutes.

Step 3

While the chicken marinates, cook the frozen French fries according to the package instructions. Set them aside to cool slightly.

Step 4

Preheat a skillet or grill pan over medium-high heat. Cook the marinated chicken breasts for 5-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is fully cooked. Let the chicken rest for a few minutes before slicing it into thin strips.

Step 5

Warm the flour tortillas in a dry skillet over medium heat for about 30 seconds on each side, or wrap them in a damp paper towel and microwave them for 20 seconds to make them pliable.

Step 6

To assemble the burritos, lay one tortilla flat and spread a few spoonfuls of guacamole in the center. Add a generous layer of shredded lettuce, diced tomatoes, a handful of French fries, sliced chicken, shredded cheddar cheese, and a dollop of sour cream and salsa.

Step 7

Carefully fold in the sides of the tortilla and roll it tightly from the bottom to form a burrito. Repeat with the remaining tortillas and fillings.

Step 8

Optional: Heat a large dry skillet over medium heat and lightly toast each burrito for 1-2 minutes on each side to seal and crisp the exterior.

Step 9

Cut the burritos in half, if desired, and serve immediately. Enjoy your California Chicken Burritos!
