Ingredients

  • 12 ounces spaghetti
  • 2 pieces boneless, skinless chicken breasts

  • 2 cups baby spinach
  • 2 tablespoons lemon juice, freshly squeezed
  • 1 cup parmesan cheese, grated
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Bring a large pot of salted water to a boil and cook the spaghetti according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the spaghetti and set it aside.

Step 2

While the pasta cooks, season the chicken breasts with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 6-7 minutes on each side, or until they are golden brown and fully cooked (internal temperature of 165°F).
