Ingredients

  • 5 whole (seeded and finely chopped) Jalapeno peppers
  • 1 whole (seeded and finely chopped) Red bell pepper
  • 1 whole (seeded and finely chopped) Yellow bell pepper
  • 1 whole (seeded and finely chopped) Green bell pepper
  • 4 cups Granulated sugar
  • 1 cup Apple cider vinegar
  • 6 oz (2 packets, typically) Liquid pectin
  • 0.5 tsp Salt

Directions

Step 1

Wash and finely chop the jalapeno peppers, red bell pepper, yellow bell pepper, and green bell pepper. Use gloves while handling the jalapenos to avoid irritation.

Step 2

In a large, heavy-bottomed saucepan, combine the chopped peppers, granulated sugar, apple cider vinegar, and salt.

Step 3

Place the saucepan over medium-high heat and stir the mixture until the sugar dissolves completely. Bring the mixture to a boil.

Step 4

Reduce the heat to medium, and let the mixture simmer for 10 minutes, stirring occasionally.

Step 5

Increase the heat again to bring the mixture to a rolling boil. Stir in the liquid pectin and boil for 1-2 minutes, stirring constantly.

Step 6

Remove the saucepan from heat and skim off any foam that has formed on the surface of the jam.

Step 7

Carefully ladle the hot jam into sterilized jars, leaving about 1/4 inch of headspace at the top of each jar.

Step 8

Seal the jars with sterilized lids and rings. If preserving, process in a boiling water bath for 10 minutes.

Allow the jars to cool completely at room temperature. Store in the refrigerator if not processed in a water bath, or in a cool, dark place if properly canned.
