Ingredients

  • 500 grams Calf's liver
  • 2 medium Yellow onions
  • 50 grams Raisins
  • 30 grams Pine nuts
  • 50 grams All-purpose flour
  • 40 grams Unsalted butter
  • 2 tablespoons Olive oil
  • 1 tablespoon Balsamic vinegar
  • 2 tablespoons Fresh parsley
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 250 milliliters Milk

Directions

Step 1

Start by soaking the calf's liver in milk for 30 minutes to reduce any potential bitterness and tenderize the liver. Drain and pat dry with paper towels.

Step 2

Peel and thinly slice the yellow onions. Set aside.

Step 3

In a small dry skillet, toast the pine nuts over medium heat until golden and fragrant, about 2-3 minutes. Remove from the skillet and set aside.

Step 4

In the same skillet, heat 1 tablespoon of olive oil and 20 grams of butter over medium heat. Add the sliced onions and cook, stirring occasionally, until caramelized, about 15 minutes. Add the raisins during the last 5 minutes of cooking and stir. Transfer the mixture to a plate and set aside.

Step 5

Place the flour onto a shallow plate. Lightly coat each piece of liver in the flour, shaking off any excess.

Step 6

In a large skillet, heat the remaining olive oil and butter over medium-high heat. Add the liver slices and cook for 2-3 minutes on each side, or until golden brown and just cooked through. Avoid overcooking as the liver can become tough.

Step 7

Return the onion and raisin mixture to the skillet with the liver. Drizzle the balsamic vinegar over the mixture and stir gently to combine. Cook for an additional 2 minutes to blend the flavors.

Step 8

Sprinkle the toasted pine nuts and chopped fresh parsley over the dish. Season with salt and black pepper to taste.

Step 9

Serve immediately, ideally with a side of mashed potatoes, polenta, or crusty bread to soak up the delicious juices.
