Ingredients

  • 500 grams calf's liver
  • 2 large yellow onions
  • 50 grams all-purpose flour
  • 30 grams butter
  • 2 tablespoons olive oil
  • 250 milliliters milk
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Gently rinse the calf's liver under cold water and remove any visible membranes. Cut into slices about 1 cm (0.4 inches) thick.

Step 2

Place the calf's liver in a bowl and submerge it in milk. Allow it to soak for 20-30 minutes to remove any bitterness and tenderize the liver.

Step 3

Peel the onions and slice them into thin rings.

Step 4

In a large skillet, heat 1 tablespoon of olive oil and 15 grams of butter over medium heat. Add the sliced onions and sauté, stirring occasionally, for 10-12 minutes, or until they become caramelized and golden brown. Remove the onions from the skillet and set aside.

Step 5

Drain the calf's liver and pat it dry with paper towels. Lightly season both sides with half of the salt and pepper.

Step 6

Spread the flour on a plate and lightly dredge each slice of liver in the flour, shaking off any excess.

Step 7

In the same skillet, add the remaining olive oil and butter. Heat over medium-high heat until the butter melts and begins to bubble.

Step 8

Add the liver slices to the skillet in a single layer. Cook for 2-3 minutes per side, or until browned on the outside but still slightly pink in the center (avoid overcooking to retain tenderness). Work in batches if needed.

Step 9

Return the caramelized onions to the skillet, arranging them over the liver slices. Allow the onions to warm through for 1-2 minutes.

Step 10

Sprinkle the dish with freshly chopped parsley and serve immediately. Pair with mashed potatoes, steamed vegetables, or a slice of crusty bread for a complete meal.
