Ingredients

  • 1 cup Basmati rice
  • 2 cups Water
  • 1 teaspoon Salt
  • 1 cup Cherry tomatoes, halved
  • 1 cup Cucumber, diced
  • 0.5 cup Red bell pepper, diced
  • 0.25 cup Red onion, finely chopped
  • 0.25 cup Fresh parsley, chopped
  • 3 tablespoons Extra virgin olive oil
  • 2 tablespoons Lemon juice
  • 1 tablespoon White wine vinegar
  • 1 clove Garlic, minced
  • 0.25 teaspoon Ground black pepper
  • 0.5 cup Feta cheese, crumbled (optional)

Directions

Step 1

Rinse the basmati rice under cold water until the water runs clear to remove excess starch.

Step 2

In a medium saucepan, bring the water and salt to a boil. Add the rinsed rice, reduce the heat to low, cover, and simmer for 12-15 minutes or until the rice is tender and the water is absorbed.

Once cooked, remove the rice from the heat and let it cool completely to room temperature.
