Ingredients

  • 2 tablespoons olive oil
  • 1 pound mild or spicy Italian sausage, casings removed
  • 1 medium yellow onion, diced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 4 garlic cloves, minced
  • 6 cups chicken broth
  • 2 15-ounce cans canned chickpeas, drained and rinsed
  • 6 cups kale, tough stems removed and leaves chopped
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes (optional, for heat)
  • 0 parmesan cheese, grated (optional, for serving)
  • 0 crusty bread (optional, for serving)

Directions

Step 1

Heat the olive oil in a large soup pot or Dutch oven over medium heat.

Step 2

Add the sausage to the pot, breaking it up with a wooden spoon as it cooks. Sauté until browned and cooked through, about 8-10 minutes. Use a slotted spoon to transfer the cooked sausage to a plate and set aside.

Step 3

In the same pot, add the diced onion, carrots, and celery. Cook over medium heat, stirring occasionally, until softened, about 5-7 minutes.

Step 4

Add the minced garlic and cook for 1 minute until fragrant.

Step 5

Pour in the chicken broth and stir, scraping up any browned bits on the bottom of the pot for added flavor.

Step 6

Add the chickpeas, fresh thyme, smoked paprika, salt, black pepper, and red pepper flakes (if using). Bring the mixture to a boil.

Step 7

Once boiling, reduce the heat to a simmer. Stir in the chopped kale and let the soup simmer uncovered for 10 minutes.

Step 8

Return the cooked sausage to the pot. Let the soup simmer for another 5 minutes to allow the flavors to meld together.

Step 9

Taste and adjust seasoning, adding more salt or pepper if needed.

Step 10

Serve hot, garnished with grated parmesan (if desired), alongside crusty bread for dipping.
