  • 2 pounds beef chuck roast
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 4 cloves garlic cloves, minced
  • 4 medium roasted green chiles, peeled and diced
  • 14 ounces diced tomatoes
  • 4 cups beef broth
  • 3 medium russet potatoes, peeled and cubed
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 0.25 cup fresh cilantro, chopped
  • 4 pieces lime wedges

Directions

Step 1

Trim excess fat from the beef chuck roast and cut it into 1-inch cubes. Season with 1 teaspoon of salt and 1 teaspoon of black pepper.

Step 2

Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the beef in batches and sear until browned on all sides. Remove and set aside.

In the same pot, add the diced onion and sauté for 5-7 minutes, stirring occasionally, until translucent. Add the minced garlic and cook for an additional minute, until fragrant.
