Ingredients

  • 500 grams calamari (cleaned, tubes and tentacles)
  • 250 grams cherry tomatoes
  • 2 tablespoons capers (rinsed and drained)
  • 1 small red onion (thinly sliced)
  • 2 tablespoons parsley (chopped)
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1 clove garlic (minced)
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 cups arugula

Directions

Step 1

Bring a medium pot of water to a boil and lightly salt it.

Cut the calamari tubes into rings and leave the tentacles whole.
