Ingredients

  • 500 grams Fresh squid (calamari), cleaned
  • 3 tablespoons Extra virgin olive oil
  • 2 cloves Garlic, finely minced
  • 2 tablespoons Fresh parsley, finely chopped
  • 1 whole Lemon, cut into wedges
  • 1 teaspoon Sea salt
  • 0.5 teaspoons Freshly ground black pepper

Directions

Step 1

Rinse the cleaned squid thoroughly under cold running water and pat them dry with paper towels. Slice the squid bodies into 1 cm-wide rings, leaving the tentacles whole.

Step 2

Heat a large griddle or heavy skillet over high heat until very hot. Drizzle 1 tablespoon of the olive oil onto the surface of the pan and spread it evenly.

Step 3

Working in batches to avoid overcrowding the pan, place the squid rings and tentacles on the hot griddle. Cook for 1-2 minutes on one side without moving them, until they develop a light golden color.

Step 4

Flip the squid and cook for another 1-2 minutes. Remove the cooked squid to a plate and repeat with the remaining batches, adding a little more olive oil if needed.

Step 5

Once all the squid is cooked, reduce the heat to medium-low and add the minced garlic to the griddle or skillet. Cook for 30 seconds until fragrant, being careful not to burn it.

Step 6

Return all the cooked squid to the skillet and toss gently to coat in the garlic oil. Season with sea salt and freshly ground black pepper to taste.

Step 7

Remove the squid from the heat and transfer to a serving dish. Sprinkle generously with chopped parsley and serve immediately with lemon wedges on the side.
