Ingredients

  • 2 lbs Pork shoulder (cut into 1-inch cubes)
  • 2 Zucchini (medium, diced)
  • 4 Tomatoes (Roma, diced)
  • 1 Onion (medium, diced)
  • 3 Garlic cloves (minced)
  • 2 cups Chicken broth
  • 2 tbsp Vegetable oil
  • 2 Green chilies (diced, optional)
  • 0.25 cups Cilantro (chopped)
  • 1 tsp Ground cumin
  • 1 tsp Dried oregano
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 cup Corn kernels (fresh or frozen)

Directions

Step 1

Heat the vegetable oil in a large pot or Dutch oven over medium-high heat.

Step 2

Season the pork cubes with salt and black pepper. Add them to the pot and sear on all sides until browned, about 8-10 minutes.

Step 3

Remove the pork and set aside. In the same pot, add the diced onion and sauté until translucent, about 3-4 minutes.

Add the minced garlic and cook for another 1-2 minutes until fragrant.

Stir in the diced tomatoes, green chilies (if using), ground cumin, and dried oregano. Cook for 5 minutes to allow the tomatoes to break down and release their juices.
