Ingredients

  • 2 sheets pre-made puff pastry sheets
  • 1 cup cooked andouille sausage, diced
  • 1 cup cooked chicken breast, shredded
  • 0.5 cup bell pepper, finely diced
  • 0.25 cup celery, finely diced
  • 0.25 cup onion, finely diced
  • 2 cloves garlic, minced
  • 1 tablespoon Cajun seasoning
  • 4 ounces cream cheese, softened
  • 1 cup sharp cheddar cheese, shredded
  • 1 large egg, beaten
  • 1 tablespoon water
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the diced bell pepper, celery, onion, and garlic. Sauté for 3–5 minutes until the vegetables are softened.

Step 3

Stir in the diced andouille sausage, shredded chicken, and Cajun seasoning. Cook for another 2–3 minutes, stirring to combine the flavors.

Step 4

Remove the skillet from heat and let the mixture cool slightly. Once cooled, stir in the softened cream cheese and shredded cheddar cheese until well mixed and creamy.

Step 5

On a lightly floured surface, roll out the puff pastry sheets and cut each into 4 equal squares (for a total of 8 squares).

Step 6

Place a heaping tablespoon of the Cajun filling in the center of each square.

Step 7

In a small bowl, whisk the beaten egg with 1 tablespoon of water to create an egg wash.

Step 8

Brush the edges of the pastry squares with the egg wash, then fold each square diagonally to form a triangle. Press the edges firmly with a fork to seal.

Step 9

Transfer the turnovers to the prepared baking sheet. Brush the tops with the remaining egg wash to give them a golden finish during baking.

Step 10

Bake in the preheated oven for 20–25 minutes or until the turnovers are puffed and golden brown.

Step 11

Allow the turnovers to cool slightly before serving. Enjoy these flavorful bites warm!
