Ingredients

  • 2 pounds Russet potatoes
  • 1 teaspoon Salt
  • 1 cup Mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon Smoked paprika
  • 2 Celery stalks, chopped
  • 1 Green bell pepper, diced
  • 0.5 Red onion, finely chopped
  • 2 Hard-boiled eggs, chopped
  • 1 tablespoon Apple cider vinegar
  • 2 tablespoons Chopped fresh parsley (optional)
  • 0.5 teaspoon Black pepper

Directions

Step 1

Peel and dice the russet potatoes into 1-inch cubes. Place them in a large pot and cover with cold water. Add 1 teaspoon of salt to the water.

Step 2

Bring the pot to a boil over medium-high heat. Reduce heat and simmer for 12-15 minutes, or until the potatoes are tender but not falling apart. Drain and set aside to cool slightly.

Step 3

In a large mixing bowl, combine the mayonnaise, Dijon mustard, Cajun seasoning, smoked paprika, apple cider vinegar, and black pepper. Whisk until smooth and creamy.

Step 4

Add the diced celery, green bell pepper, red onion, and hard-boiled eggs to the bowl with the dressing. Stir to combine.

Step 5

Gently fold in the cooked potato cubes, being careful not to mash them. Continue folding until all the potatoes are coated with the dressing.

Step 6

Taste the potato salad and adjust seasoning, adding more salt, black pepper, or Cajun seasoning as needed.

Step 7

Cover the bowl with plastic wrap and refrigerate for at least 1 hour to let the flavors meld together.

Step 8

Before serving, sprinkle chopped fresh parsley on top for garnish, if desired.
