Ingredients

  • 2 pounds Pork loin
  • 2 tablespoons Olive oil
  • 3 tablespoons Cajun seasoning
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Butter
  • 1 medium (finely chopped) Yellow onion
  • 4 cloves (minced) Garlic
  • 1 cup Chicken broth
  • 0.5 cup Heavy cream
  • 2 tablespoons Chopped parsley

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Pat the pork loin dry with paper towels and rub it all over with 1 tablespoon of olive oil.

Step 3

In a small bowl, mix 2 tablespoons of Cajun seasoning, garlic powder, paprika, salt, and black pepper. Rub this spice blend generously over the pork loin, coating it evenly.

Step 4

Heat a large, oven-safe skillet over medium-high heat and add the remaining 1 tablespoon of olive oil.

Step 5

Sear the pork loin in the skillet for 2-3 minutes per side until it is browned all over. Remove the pork and set aside.

Step 6

Reduce the heat to medium and add the butter to the same skillet. Once the butter has melted, add the chopped onion and sauté for 3-4 minutes until softened.

Step 7

Add the minced garlic and cook for another 30 seconds until fragrant.

Step 8

Stir in the chicken broth and use a wooden spoon to scrape up any browned bits from the bottom of the skillet.

Step 9

Add the heavy cream, the remaining 1 tablespoon of Cajun seasoning, and stir well to combine. Let the sauce simmer for 2-3 minutes.

Step 10

Return the pork loin to the skillet, spoon some of the sauce over the top, and transfer the skillet to the preheated oven.

Step 11

Bake the pork for 25-30 minutes or until an internal temperature of 145°F (63°C) is reached. Use a meat thermometer to check for doneness.

Step 12

Remove the skillet from the oven and let the pork rest for 5 minutes before slicing.

Step 13

Garnish with chopped parsley and serve with the creamy Cajun sauce drizzled over the top. Pair it with rice, mashed potatoes, or roasted vegetables for a complete meal.
