  • 4 large tomatoes
  • 1 tablespoon olive oil
  • 4 ounces andouille sausage, diced

  • 1 cup cooked white rice
  • 1 teaspoon Cajun seasoning
  • 0.5 teaspoon paprika
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup shredded cheddar cheese
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Slice the tops off the tomatoes and carefully scoop out the pulp and seeds using a spoon, leaving the shells intact. Reserve the pulp and dice it finely. Set the hollowed tomatoes aside.

Heat the olive oil in a large skillet over medium heat.

Add the diced andouille sausage to the skillet and cook for 3-4 minutes until browned.

Stir in the chopped onion and green bell pepper, cooking for another 3-4 minutes until the vegetables soften.
