  • 1 string for tying roast
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Start by butterflying the pork loin. Lay the roast flat on a cutting board, and using a sharp knife, carefully slice horizontally so that the roast opens up like a book. Be careful not to cut all the way through.

Cover the pork with plastic wrap and gently pound it with a meat mallet to an even thickness, about 1 inch.
