Ingredients

  • 1 pound Boneless skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 3 tablespoons Olive oil
  • 1 medium Red bell pepper
  • 1 medium Green bell pepper
  • 1 medium Yellow onion
  • 1 medium Zucchini
  • 3 large Garlic cloves
  • 2 tablespoons Soy sauce
  • 2 tablespoons Chicken broth
  • 3 cups Cooked white or brown rice
  • 2 tablespoons Green onions (optional, for garnish)

Directions

Step 1

Slice the chicken breasts into thin strips and toss with 1 tablespoon of Cajun seasoning. Set aside.

Step 2

Chop the red bell pepper, green bell pepper, yellow onion, and zucchini into bite-sized pieces. Mince the garlic cloves.

Step 3

Heat 2 tablespoons of olive oil in a large skillet or wok over medium-high heat. Add the seasoned chicken and cook for 4-5 minutes, stirring occasionally, until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.

Step 4

In the same skillet, heat the remaining 1 tablespoon of olive oil. Add the garlic and cook for 30 seconds until fragrant.
