Ingredients

  • 4 pieces Chicken thighs, boneless and skinless
  • 500 grams Baby potatoes
  • 3 tablespoons Olive oil
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Fresh parsley, chopped
  • 1 piece Lemon, sliced

Directions

Step 1

Preheat your oven to 200°C (400°F) and lightly grease a large baking sheet with olive oil or non-stick spray.

Step 2

Wash the baby potatoes thoroughly and cut them in half. If they are larger, quarter them for even cooking.

Step 3

In a small bowl, mix the Cajun seasoning, garlic powder, paprika, salt, and black pepper.

Step 4

Rub 1 tablespoon of olive oil evenly over the chicken thighs and sprinkle half of the spice mixture onto both sides of the chicken.

Step 5

In a large mixing bowl, toss the potatoes with the remaining olive oil and the other half of the spice mixture until evenly coated.

Step 6

Spread the potatoes onto the prepared baking sheet in an even layer. Nestle the seasoned chicken thighs among the potatoes.

Step 7

Bake in the preheated oven for 30-35 minutes, or until the chicken is cooked through (internal temperature of 75°C/165°F), and the potatoes are golden and tender.

Step 8

For an extra crispy finish, switch the oven to broil mode for the final 3-5 minutes, keeping a close watch to prevent burning.

Step 9

Remove the baking sheet from the oven and garnish the dish with chopped parsley and a few lemon slices for a bright, fresh flavor.

Step 10

Serve hot and enjoy your Cajun Spiced Chicken Potatoes with a side salad or crusty bread, if desired.
