Ingredients

  • 15 ounces canned black beans (drained and rinsed)
  • 14 ounces canned diced tomatoes
  • 2 tablespoons tomato paste
  • 1 cup chicken or vegetable broth
  • 1.5 tablespoons Cajun seasoning
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 stalks green onions, sliced (for garnish)
  • 2 tablespoons parsley, chopped (for garnish)
  • 0 hot sauce (optional, to taste)

Directions

Step 1

Heat a large skillet or cast-iron pan over medium heat. Add olive oil.

Step 2

If using andouille sausage, add the slices to the skillet and cook until browned on both sides, about 5 minutes. Remove the sausage and set aside.

In the same skillet, add the diced onion, bell pepper, and celery. Cook until softened, about 5 minutes.
