Ingredients

  • 500 g large shrimp
  • 2 tbsp Cajun seasoning
  • 3 tbsp vegetable oil
  • 2 tbsp unsalted butter
  • 150 g all-purpose flour
  • 100 g yellow cornmeal
  • 2 tsp baking powder
  • 1 tbsp granulated sugar
  • 1.5 tsp salt
  • 250 ml whole milk
  • 1 large egg
  • 30 g butter (melted)
  • 120 g frozen or fresh corn kernels
  • 2 tbsp green onions (chopped)
  • 1 tbsp fresh parsley (chopped, optional)
  • 4 lemon wedges (for serving)

Directions

Step 1

Peel and devein the shrimp, then pat them dry with paper towels. Toss them in a bowl with the Cajun seasoning until evenly coated. Set aside.

Step 2

In a large non-stick skillet, heat 2 tablespoons of vegetable oil over medium-high heat. Add the shrimp in a single layer and cook for 2-3 minutes per side or until pink and opaque. Remove from the skillet and keep warm.

In the same skillet, add the remaining 1 tablespoon of oil and 1 tablespoon of butter. Stir to deglaze the pan, then wipe clean with a paper towel for later use.
