Ingredients

  • 12 ounces Penne pasta
  • 1 pound Large shrimp, peeled and deveined
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 1.5 cups Heavy cream
  • 1 cup Parmesan cheese, grated
  • 3 cloves Garlic, minced
  • 1 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Parsley, chopped (optional for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta cooking water.

Step 2

In a medium bowl, toss the shrimp with 1 tablespoon of Cajun seasoning until evenly coated.

Step 3

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, or until pink and cooked through. Remove shrimp from the skillet and set aside.

Step 4

In the same skillet, add the remaining olive oil and butter. Lower the heat to medium and sauté the minced garlic for about 1 minute, or until fragrant.

Cook for another 1-2 minutes to warm everything through, then remove from heat.
