Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, diced
  • 1 medium bell pepper, diced (red, green, or both)
  • 2 celery stalks, diced
  • 4 garlic cloves, minced
  • 2 tablespoons cajun seasoning blend
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 14.5 ounces diced tomatoes (canned, with juices)
  • 4 cups seafood stock
  • 2 bay leaves
  • 1 pound shrimp (peeled and deveined)
  • 1 pound scallops
  • 1 cup crab meat (lump or claw)
  • 2 tablespoons fresh parsley, chopped
  • 2 green onions, sliced
  • 1 teaspoon hot sauce (optional)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 3 cups cooked white rice (optional, for serving)

Directions

Step 1

Heat the olive oil and butter in a large heavy-bottomed pot or Dutch oven over medium heat.

Step 2

Add the diced onion, bell pepper, and celery to the pot. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are softened.

Step 3

Stir in the minced garlic, Cajun seasoning, smoked paprika, and dried thyme. Cook for 1-2 minutes until the spices are fragrant.

Step 4

Pour in the diced tomatoes (with their juices) and seafood stock. Add the bay leaves, and stir to combine.

Step 5

Bring the mixture to a boil, then reduce the heat to low and simmer for 20 minutes to let the flavors meld.

Step 6

Carefully add the shrimp and scallops to the pot, ensuring they are submerged in the broth. Simmer for 5-6 minutes until they are just cooked through.

Step 7

Gently fold in the crab meat, being careful not to break it apart too much. Cook for an additional 2-3 minutes to warm the crab meat.

Step 8

Remove the bay leaves from the pot. Stir in the chopped parsley and green onions. Adjust seasoning with salt, black pepper, and hot sauce, if desired.

Step 9

Serve the stew hot, either on its own or ladled over cooked white rice for a heartier meal.
