Ingredients

  • 12 oz Fettuccine
  • 2 tbsp Olive oil
  • 2 tbsp Unsalted butter
  • 1 lb Shrimp, peeled and deveined
  • 0.5 lb Sea scallops
  • 2 tbsp Cajun seasoning
  • 3 cloves Garlic, minced
  • 2 cups Heavy cream
  • 1 cup Parmesan cheese, grated
  • 2 tbsp Fresh parsley, chopped
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 tsp Crushed red pepper flakes (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the fettuccine according to the package instructions until al dente. Drain and set aside.

Step 2

In a large skillet, heat the olive oil and 1 tablespoon of the butter over medium-high heat.

Step 3

Season the shrimp and scallops with 1 tablespoon of Cajun seasoning. Add them to the skillet in a single layer and cook for 2-3 minutes on each side until golden and opaque. Remove the seafood from the skillet and set aside.

Step 4

Reduce the heat to medium and add the remaining tablespoon of butter to the skillet. Stir in the minced garlic and sauté for 30 seconds until fragrant.

Step 5

Pour in the heavy cream and add the remaining Cajun seasoning, salt, black pepper, and optional crushed red pepper flakes. Stir well and bring to a gentle simmer.

Step 6

Add the grated Parmesan cheese to the cream mixture, stirring until the cheese is melted and the sauce thickens, about 5 minutes.

Step 7

Return the cooked shrimp and scallops to the skillet, stirring to coat them in the sauce. Let them simmer for 2-3 minutes to absorb the flavors.

Step 8

Toss the cooked fettuccine into the skillet with the sauce and seafood, mixing thoroughly to combine.

Step 9

Garnish with chopped fresh parsley and serve hot. Enjoy your Cajun Seafood Pasta!
