  • 0.5 teaspoon dried thyme
  • 14.5 ounces, canned diced tomatoes
  • 2 sliced scallions
  • 0.5 teaspoon (or to taste) salt
  • 0.25 teaspoon (or to taste) black pepper

Directions

Step 1

Heat a large skillet or Dutch oven over medium heat. Slice the andouille sausage into rounds, then add them to the skillet.

Cook the sausage for 5-7 minutes, turning occasionally, until browned. Remove the sausage from the pan and set aside.
