Ingredients

  • 2 pieces (4-6 oz each) salmon fillets
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 4 ounces goat cheese
  • 0.25 cup mayonnaise
  • 1 teaspoon lemon zest
  • 0.5 teaspoon fresh lemon juice
  • 2 pieces brioche buns
  • 1 cup mixed greens or arugula
  • 1 tablespoon butter
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat a skillet or grill pan over medium-high heat.

Step 2

Pat the salmon fillets dry with a paper towel and evenly coat them with Cajun seasoning, adding salt and pepper if desired.

Step 3

Add olive oil to the skillet and heat until shimmering.

Step 4

Place the salmon fillets skin-side down (if applicable) and cook for 3-4 minutes per side, or until the salmon is opaque and cooked through. Remove from heat and let rest for a minute.

Step 5

While the salmon is cooking, prepare the lemon mayonnaise by combining mayonnaise, lemon zest, and lemon juice in a small bowl. Mix until smooth and set aside.

Step 6

Lightly butter the brioche buns and toast them in a separate pan over medium heat until golden and crisp. Remove from heat.

Step 7

Spread a generous layer of goat cheese on the bottom half of each toasted brioche bun.

Step 8

Top the goat cheese with a cooked salmon fillet, followed by a handful of mixed greens or arugula.

Step 9

Spread the lemon mayonnaise on the top half of the bun, then place it on top of the sandwich to finish assembly.

Step 10

Serve immediately and enjoy your Cajun Salmon Sandwich with Goat Cheese and Lemon Mayonnaise!
