Ingredients

  • 450 grams Fresh salmon fillets (skinless)
  • 1 cup Panko breadcrumbs
  • 1 large Egg
  • 2 stalks Green onions, finely chopped
  • 0.5 Red bell pepper, finely diced
  • 2 teaspoons Cajun seasoning
  • 2 tablespoons Mayonnaise
  • 1 teaspoon Lemon zest
  • 2 tablespoons Fresh parsley, finely chopped
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 0.333 cup Mayonnaise (for aioli)
  • 1 tablespoon Lemon juice
  • 1 clove Garlic, minced
  • 0.125 teaspoon Salt (for aioli)
  • 0.125 teaspoon Black pepper (for aioli)

Directions

Step 1

Preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper or lightly grease it.

Step 2

Place the salmon fillets on the prepared baking sheet and bake for 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork. Allow to cool slightly.

Step 3

Once cooled, flake the salmon into small pieces using a fork and transfer it to a large mixing bowl.

Step 4

Add the Panko breadcrumbs, egg, green onions, diced red bell pepper, Cajun seasoning, mayonnaise, lemon zest, parsley, salt, and black pepper to the bowl with the salmon. Mix until just combined.

Step 5

Using your hands, shape the mixture into 8 evenly sized patties, about 5-6 cm (2-2.5 inches) in diameter.

Step 6

Heat the olive oil in a large skillet over medium heat. Once hot, add the salmon cakes and cook for 3-4 minutes per side, or until golden brown and crispy. Cook in batches if necessary to avoid overcrowding.

Step 7

While the salmon cakes are cooking, prepare the lemon garlic aioli by whisking together the mayonnaise, lemon juice, minced garlic, salt, and black pepper in a small bowl. Adjust seasoning to taste.

Step 8

Serve the Cajun salmon cakes warm with a dollop of lemon garlic aioli on the side. Garnish with additional parsley and lemon wedges if desired.
