Ingredients

  • 2 cups long-grain white rice
  • 3 cups chicken broth
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 1 medium green bell pepper, diced
  • 1 celery stalk, diced
  • 2 garlic cloves, minced
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon salt (adjust as needed)
  • 1 bay leaf
  • 0.5 cup optional diced andouille sausage or cooked shrimp
  • 2 tablespoons chopped fresh parsley (for garnish)

Directions

Step 1

Rinse the rice under cold water to remove excess starch and set aside.

Step 2

Heat olive oil in a small skillet over medium heat. Sauté the diced onion, green bell pepper, and celery for 3-4 minutes until softened. Add the minced garlic and cook for another minute. Turn off the heat.

Step 3

In the rice cooker pot, combine the rinsed rice, sautéed vegetables, chicken broth, Cajun seasoning, smoked paprika, dried thyme, black pepper, salt, and bay leaf.

Step 4

If using andouille sausage or cooked shrimp, add it to the rice cooker at this stage.

Step 5

Turn on the rice cooker and cook on the standard white rice setting.

Step 6

Once the rice cooker switches to 'warm,' let the rice sit for an additional 5-10 minutes to allow the flavors to meld.

Step 7

Open the rice cooker, carefully remove the bay leaf, and fluff the rice with a fork.

Step 8

Garnish with fresh parsley and serve hot.
