Ingredients

  • 3 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 4 garlic cloves, minced
  • 1 yellow onion, diced
  • 2 celery stalks, chopped
  • 3 carrots, peeled and cut into chunks
  • 4 potatoes, quartered
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 14.5 ounces diced tomatoes, canned
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Season the chuck roast generously on all sides with 1 tablespoon of the Cajun seasoning.

Step 2

Heat the olive oil in a large skillet over medium-high heat. Sear the roast on all sides until browned, about 3-4 minutes per side. Remove and set aside.

In the same skillet, sauté the minced garlic and diced onion until fragrant and translucent, about 2-3 minutes.
