  • 3 pounds Beef chuck roast
  • 3 tablespoons Cajun seasoning

  • 2 tablespoons Olive oil
  • 4 cloves Garlic cloves, minced
  • 1 None Yellow onion, chopped
  • 4 None Carrots, peeled and cut into chunks
  • 3 None Celery stalks, cut into chunks
  • 3 None Russet potatoes, peeled and quartered
  • 3 cups Beef broth
  • 1 can (14-ounce) Diced tomatoes
  • 4 None Fresh thyme sprigs
  • 2 None Bay leaves

Directions

Step 1

Pat the beef chuck roast dry with paper towels, then generously rub it with 2 tablespoons of Cajun seasoning, salt, and black pepper on all sides.

Step 2

In a large, heavy-bottomed skillet or Dutch oven, heat the olive oil over medium-high heat. Once hot, sear the roast on all sides until golden brown, about 4-5 minutes per side. Remove the roast and set aside.

Step 3

In the same skillet, lower the heat to medium and add the minced garlic and chopped onion. Sauté for 2-3 minutes, stirring frequently, until softened and fragrant.

Add the carrots, celery, and potatoes to the skillet, and cook for another 5 minutes, stirring occasionally.
