Ingredients

  • 3 pounds Pork loin roast
  • 2 tablespoons Cajun seasoning
  • 4 cloves Garlic cloves
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion
  • 1 medium Red bell pepper
  • 1 medium Green bell pepper
  • 1 cup Chicken broth
  • 1 teaspoon Paprika
  • 1 teaspoon Thyme (dried)
  • 0.5 teaspoon Cayenne pepper (optional)
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Pat the pork loin roast dry with paper towels. Rub the Cajun seasoning evenly over all sides of the pork.

Step 2

Peel and mince the garlic cloves. Slice the yellow onion, red bell pepper, and green bell pepper into thin strips.

Step 3

In a large skillet, heat the olive oil over medium-high heat. Sear the pork loin roast for 2-3 minutes on each side until golden brown. Remove from heat and set aside.
