Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
In a large skillet, heat olive oil over medium heat. Add diced onion, diced red bell pepper, and minced garlic. Sauté for 3-4 minutes until softened.
Add the ground pork to the skillet. Break it up into small pieces while cooking. Stir in the Cajun seasoning and cook for 6-7 minutes until the pork is fully cooked and no longer pink.
