Ingredients

  • 2 cups raw shelled peanuts
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon cayenne pepper
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine olive oil, Cajun seasoning, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and ground black pepper. Stir to form a smooth spice mixture.

Step 3

Add the raw shelled peanuts to the bowl and toss thoroughly until the peanuts are evenly coated with the spice mixture.

Step 4

Spread the coated peanuts in a single layer on the prepared baking sheet.

Step 5

Place the baking sheet in the preheated oven and roast the peanuts for 18–20 minutes, stirring halfway through to ensure even cooking.

Step 6

Remove the peanuts from the oven and allow them to cool completely on the baking sheet. The peanuts will crisp up as they cool.

Step 7

Once cooled, transfer the Cajun peanuts to an airtight container for storage or serve immediately as a snack.
