  • 0.75 cup Grated Parmesan cheese
  • 2 cups Fresh spinach
  • 0.5 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Fresh parsley (chopped for garnish)
  • 1 piece Lemon (for zest and juice)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken cubes and season with 1 tablespoon of Cajun seasoning. Cook for 6-8 minutes, stirring occasionally, until the chicken is fully cooked and browned. Remove the chicken from the skillet and set aside.
