  • 1 Green bell pepper, diced
  • 4 Garlic cloves, minced
  • 14 ounces Crushed tomatoes
  • 4 cups Chicken stock
  • 2 cups Arborio rice (or paella rice)
  • 1 teaspoon Smoked paprika
  • 1 pound Shrimp, peeled and deveined
  • 1 pound Clams or mussels
  • 1 cup Frozen peas
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)
  • 4 pieces Lemon wedges (optional, for serving)

Directions

Step 1

Heat olive oil in a large paella pan or wide skillet over medium-high heat.

Step 2

Slice the andouille sausage into 1/2-inch thick pieces and cook until browned. Remove and set aside.

Step 3

Season the chicken thighs with 1 tablespoon of Cajun seasoning, then sear until browned on both sides. Remove and set aside.

Step 4

Add the diced onion, red bell pepper, green bell pepper, and garlic to the pan. Cook until softened, about 5 minutes.

Stir in the crushed tomatoes, chicken stock, and remaining Cajun seasoning. Bring to a simmer.
