Ingredients

  • 3 cups fresh corn kernels (from about 4 ears of corn)
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 medium yellow onion, finely diced
  • 1 medium red bell pepper, diced
  • 1 medium green bell pepper, diced
  • 1 stem celery stalk, finely diced
  • 3 cloves garlic cloves, minced
  • 2 medium tomatoes, diced
  • 0.5 cups heavy cream
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 stalks green onions, thinly sliced
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Heat a large skillet over medium heat and add the butter and olive oil. Allow the butter to melt completely.

Step 2

Add the diced onions, red and green bell peppers, and celery to the skillet. Cook for 5-7 minutes, stirring occasionally, until the vegetables have softened.

Step 3

Stir in the garlic and cook for 1 minute, being careful not to let it burn.

Step 4

Add the fresh corn kernels and diced tomatoes to the skillet. Stir well to combine and cook for another 5 minutes.

Step 5

Reduce the heat to low and stir in the heavy cream, Cajun seasoning, paprika, salt, and black pepper. Mix thoroughly to coat all the vegetables in the creamy spice blend.

Step 6

Allow the mixture to simmer gently for 10-12 minutes, stirring occasionally, until the sauce thickens slightly and the flavors meld together.

Step 7

Remove the skillet from heat and stir in the green onions. Adjust seasoning to taste if needed.

Step 8

Garnish the finished dish with fresh parsley and serve warm as a side dish or light main course.
