Ingredients

  • 4 pieces (about 6 oz each) Mahi Mahi fillets
  • 2 tablespoons Olive oil
  • 2 tablespoons Cajun seasoning
  • 1 whole Lime
  • 1 whole (peeled, pitted, and diced) Mango
  • 1 cup (diced fresh) Pineapple
  • 1 small (diced) Red bell pepper
  • 0.5 small (finely diced) Red onion
  • 1 small (seeded and finely chopped) Jalapeño
  • 0.25 cup (finely chopped, fresh) Cilantro
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Preheat your grill or stovetop grill pan over medium-high heat.

Step 2

Pat the mahi mahi fillets dry with a paper towel, then brush each side lightly with olive oil.

Step 3

Rub the Cajun seasoning evenly over both sides of each fillet. Set aside to marinate while you prepare the salsa.

Step 4

To make the fruit salsa, combine the diced mango, pineapple, red bell pepper, red onion, jalapeño, and cilantro in a mixing bowl.

Step 5

Cut the lime in half and squeeze its juice over the prepared salsa. Add the salt and black pepper, then stir gently to combine. Taste and adjust the seasoning if needed. Set aside.

Step 6

Lightly oil the grill or grill pan to prevent sticking. Place the seasoned mahi mahi fillets on the grill.

Step 7

Cook the fillets for about 4-5 minutes per side or until the fish is opaque and flakes easily with a fork.

Step 8

Transfer the cooked mahi mahi to plates or a serving platter.

Step 9

Top each fillet generously with the fresh fruit salsa.

Step 10

Serve immediately with your choice of steamed rice, quinoa, or a fresh green salad on the side.
