Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 2 celery stalks, diced
  • 1 large carrot, diced
  • 1 medium bell pepper, diced (red or green)
  • 3 garlic cloves, minced
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon crushed red pepper flakes (optional, for extra heat)
  • 1.5 cups green lentils, rinsed
  • 1 15-ounce can diced tomatoes (canned, with juice)
  • 6 cups vegetable broth
  • 1 bay leaf
  • 0.25 cup parsley, chopped (for garnish)
  • 1 tablespoon lemon juice
  • 0 hot sauce (optional, for serving)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the diced onion, celery, carrot, and bell pepper to the pot. Cook for 5-7 minutes, stirring occasionally, until the vegetables start to soften.

Step 3

Stir in the minced garlic, Cajun seasoning, smoked paprika, dried thyme, salt, black pepper, and crushed red pepper flakes (if using). Cook for an additional 1-2 minutes, until the spices are fragrant.

Step 4

Add the rinsed green lentils, canned diced tomatoes (with their juice), vegetable broth, and bay leaf to the pot. Stir to combine.

Step 5

Increase the heat to high and bring the stew to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 30 minutes, or until the lentils are tender.

Step 6

Remove the bay leaf from the pot and taste the stew. Adjust seasoning with additional salt or pepper, if needed.

Step 7

Stir in the chopped parsley and lemon juice right before serving for a fresh finish.

Step 8

Ladle the stew into bowls and serve hot. Add hot sauce to taste, if desired.
