  • 2 tablespoons Cajun seasoning
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 14.5 ounces diced tomatoes (with juice)
  • 6 cups chicken stock
  • 0.75 cup long-grain white rice
  • 1 pound shrimp (peeled and deveined)
  • 2 stalks green onions (sliced)
  • 2 tablespoons fresh parsley (chopped)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large pot over medium-high heat. Add the smoked sausage and cook until browned, about 4-5 minutes. Remove the sausage from the pot and set it aside.

Step 2

Add the remaining tablespoon of olive oil to the pot. Season the chicken thighs with a pinch of salt and black pepper, then add to the pot. Cook until browned on all sides, about 5-7 minutes. Remove the chicken and set it aside with the sausage.
