  • 1 teaspoon Black pepper (freshly ground)
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried oregano
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Ground cayenne pepper
  • 0.25 cup Cold water
  • 1 package Sausage casings (natural or synthetic, rinsed and soaked as per manufacturer instructions)

Directions

Step 1

Cut the pork shoulder and bacon into small chunks that will fit through your meat grinder.

Using a meat grinder, grind the pork shoulder and bacon through a medium-coarse plate into a large mixing bowl.

Add the minced habanero peppers, garlic, Cajun seasoning, smoked paprika, salt, black pepper, thyme, oregano, onion powder, and cayenne to the bowl. Mix thoroughly until evenly combined.
