  • 0.5 cup Mayonnaise
  • 2 tablespoons Ketchup
  • 1 teaspoon Hot sauce
  • 1 teaspoon Lemon juice
  • 1 Garlic clove (minced)

Directions

Step 1

Peel the Russet potatoes, if desired, and cut them into thin strips, approximately 1/4-inch wide.

Step 2

Place the potato strips in a large bowl of cold water and let soak for 30 minutes to remove excess starch. Drain and pat them dry with a clean kitchen towel.

Step 3

In a small bowl, mix paprika, garlic powder, onion powder, cayenne pepper, oregano, thyme, salt, and black pepper to create the Cajun seasoning.

Heat the vegetable oil in a deep fryer or a large, heavy-bottomed pot to 350°F (175°C).
