Ingredients

  • 500 g white fish fillets (cod, tilapia, or haddock)
  • 120 g panko breadcrumbs
  • 1 large egg
  • 2 tbsp mayonnaise
  • 2 stalks green onion, finely chopped
  • 2 tbsp fresh parsley, finely chopped
  • 1 tbsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tbsp lemon juice
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 3 tbsp vegetable oil (for frying)

Directions

Step 1

Rinse and pat dry the fish fillets. Use a sharp knife to finely chop the fish into small pieces or flake it using a fork. Transfer the fish to a large mixing bowl.

Step 2

Add the panko breadcrumbs, egg, mayonnaise, green onion, parsley, Cajun seasoning, garlic powder, paprika, lemon juice, salt, and black pepper to the bowl with the fish.

Mix all the ingredients together until well combined. The mixture should hold together when pressed. If it feels too wet, add a small amount of additional breadcrumbs.

Divide the mixture into 8 equal portions and shape them into patties about 2.5 cm (1 inch) thick. Place the patties on a plate or baking sheet and refrigerate them for 15 minutes to help them firm up.
