Ingredients

  • 12 ounces fettuccine pasta
  • 2 tablespoons olive oil
  • 1 pound shrimp (peeled and deveined)
  • 8 ounces smoked sausage (sliced)
  • 1 bell pepper (sliced, any color)
  • 1 yellow onion (diced)
  • 3 cloves garlic (minced)
  • 1.5 tablespoons Cajun seasoning
  • 2 cups heavy cream
  • 2 tablespoons unsalted butter
  • 1 cup Parmesan cheese (grated)
  • 2 tablespoons fresh parsley (chopped, optional for garnish)
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the fettuccine pasta according to package instructions until al dente. Drain and set aside.

Step 2

In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add shrimp and sprinkle with 1/2 tablespoon of Cajun seasoning. Cook for 2-3 minutes on each side until the shrimp is pink and cooked through. Remove shrimp from the skillet and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil. Add sliced sausage and cook for 3-5 minutes until browned. Remove sausage and set aside.

Add butter to the skillet and melt over medium heat. Once melted, stir in the diced onion and sliced bell pepper. Cook for 5-6 minutes until they soften.

Add minced garlic and cook for 30 seconds until fragrant.

Reduce heat to low, then stir in the heavy cream, remaining 1 tablespoon of Cajun seasoning, salt, and black pepper. Let the sauce simmer for 2-3 minutes.

Stir in grated Parmesan cheese and mix until fully melted and incorporated into the sauce.

Return the cooked shrimp and sausage to the skillet. Add the drained fettuccine pasta and toss everything together until the pasta is well coated in the sauce.

Serve immediately, garnished with freshly chopped parsley and additional Parmesan cheese, if desired.
