Ingredients

  • 6 large eggs
  • 4 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Cajun seasoning
  • 0.5 teaspoon smoked paprika
  • 2 green onions, finely chopped
  • 1 celery stalk, finely diced
  • 1 teaspoon lemon juice
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon hot sauce (optional)
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper, freshly ground

Directions

Step 1

Place the eggs in a medium-sized pot and add enough water to cover them by about an inch.

Step 2

Bring the water to a boil over high heat. Once boiling, reduce the heat to medium-low and simmer for 10 minutes.

Step 3

After 10 minutes, transfer the eggs to a bowl of ice water and let them cool for about 2-3 minutes.

Step 4

Peel the eggs once cooled and chop them into small, bite-sized pieces. Place them in a mixing bowl.

Step 5

Add the mayonnaise, Dijon mustard, Cajun seasoning, smoked paprika, green onions, celery, lemon juice, garlic powder, hot sauce (if using), salt, and black pepper to the bowl with the eggs.

Step 6

Gently mix everything together until the ingredients are evenly combined and the egg pieces are coated with the dressing.

Step 7

Taste and adjust the seasoning if needed, adding more salt, pepper, or Cajun seasoning to your liking.

Step 8

Serve immediately as a sandwich filling, in wraps, or over a salad, or chill in the refrigerator for 30 minutes for the flavors to meld together beautifully.
