  • 1 lb ground pork
  • 1 cup smoked sausage, diced
  • 1 medium green bell pepper, diced
  • 2 stalks celery, diced
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp Cajun seasoning
  • 1.5 cups cooked white rice
  • 1 cup shredded cheddar cheese
  • 12 sheets egg roll wrappers
  • 1 egg, beaten
  • 4 cups vegetable oil, for frying

Directions

Step 1

Heat a large skillet over medium heat and add the ground pork. Cook for 6-8 minutes, breaking it up into small pieces, until browned and fully cooked. Drain any excess fat.

Step 2

Add the diced smoked sausage, green bell pepper, celery, yellow onion, and minced garlic to the skillet. Cook for 5-7 minutes, stirring occasionally, until the vegetables are softened.

Step 3

Stir in the Cajun seasoning, cooked white rice, and shredded cheddar cheese. Mix well until everything is evenly combined. Remove the skillet from heat and let the filling cool slightly.

Step 4

Place an egg roll wrapper on a flat surface with one corner pointed toward you, forming a diamond shape. Spoon about 2 tablespoons of the filling into the center of the wrapper.

Step 5

Fold the bottom corner of the wrapper over the filling, then fold in the sides. Brush the top corner with beaten egg and roll the wrapper tightly to seal. Repeat with the remaining wrappers and filling.
