Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Heat olive oil in a large skillet over medium heat. Add the ground pork and sauté until browned, breaking it into small pieces with a wooden spoon (about 5-7 minutes).
Add the onion, green bell pepper, celery, and garlic to the skillet. Cook until the vegetables are softened (about 5 minutes).
Sprinkle in the Cajun seasoning and ground thyme, stirring well to coat the pork and vegetables. Cook for an additional 1 minute to toast the spices.
Add the uncooked rice to the skillet, stirring to combine. Then pour in the chicken broth. Bring the mixture to a simmer, lower the heat, and cover. Allow the rice to cook until tender and the liquid is absorbed (about 15-18 minutes).
Remove the skillet from heat and gently fold in the cooked red beans and chopped scallions. Taste the mixture and adjust seasoning if needed. Let it cool to room temperature.
On a lightly floured surface, roll out the pie dough if needed and cut it into circles about 5 inches in diameter. Reroll scraps as necessary to make 12 circles.
Place a heaping tablespoon of the dirty rice and red bean mixture in the center of one dough circle. Be careful not to overfill.
In a small bowl, beat the egg with the water to create an egg wash. Brush the edges of the dough circle with egg wash and fold it over to create a half-moon shape. Press the edges together with a fork to seal.
Transfer the sealed pies to the prepared baking sheet. Brush the tops with egg wash for a golden finish.
Bake in the preheated oven for 20-25 minutes, or until the pies are golden brown.
Allow the pies to cool slightly before serving. Serve warm or at room temperature. Enjoy!
