Preheat the oven to 200°C (400°F).
Start by making the tomato chilli jam. Finely chop the garlic and red chilli. In a medium saucepan over medium heat, add 1 tablespoon of olive oil, followed by the garlic and chilli. Sauté for 1-2 minutes until fragrant.
Add the cherry tomatoes, brown sugar, and balsamic vinegar to the pan. Stir well, reduce the heat to low, and simmer for 25-30 minutes until thickened. Stir occasionally to prevent sticking.
Peel the sweet potatoes and cut them into chunks. Place them in a large pot, cover with water, and add a pinch of salt. Bring to a boil, then simmer for 15-20 minutes until tender. Drain and set aside.
While the potatoes cook, prepare the chicken cutlets. Place each chicken breast between two sheets of plastic wrap and pound gently with a mallet or rolling pin to an even thickness of about 1 cm (0.4 inches).
Rub the chicken with Cajun seasoning on both sides. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken and cook for 4-5 minutes per side, or until golden brown and cooked through. Set aside and keep warm.
Mash the sweet potatoes using a potato masher or fork. Add butter, milk, and 1 teaspoon of salt. Season with black pepper to taste, and stir until smooth and creamy.
Plate the dish by placing a scoop of sweet potato mash onto each plate. Top with a Cajun cutlet, and spoon over a generous helping of the tomato chilli jam.
