Ingredients

  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 large yellow onion, diced
  • 1 large red bell pepper, diced
  • 2 stalks celery stalks, diced
  • 3 cloves garlic cloves, minced
  • 12 ounces smoked sausage, sliced
  • 1 tablespoon Cajun seasoning
  • 3 tablespoons all-purpose flour
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 4 cups corn kernels, fresh or frozen
  • 2 medium potatoes, peeled and diced
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 3 stalks green onions, sliced
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

In a large pot or Dutch oven, melt the butter and olive oil over medium heat.

Step 2

Add the diced onion, red bell pepper, and celery. Sauté for 5-7 minutes until softened.

Step 3

Stir in the minced garlic and cook for 1 more minute until fragrant.

Step 4

Add the sliced smoked sausage to the pot and cook for 5 minutes, stirring occasionally, until lightly browned.

Step 5

Sprinkle in the Cajun seasoning and flour, stirring constantly, to coat the vegetables and sausage.

Step 6

Slowly pour in the chicken broth while stirring to prevent lumps. Bring the mixture to a simmer.

Step 7

Add the diced potatoes and corn kernels to the pot. Cover and cook for 15 minutes, or until the potatoes are tender.

Step 8

Reduce the heat to low and stir in the heavy cream. Simmer for another 5 minutes to heat through.

Step 9

Season the chowder with salt and ground black pepper, adjusting to taste.

Step 10

Serve the Cajun Corn Chowder hot, garnished with sliced green onions and chopped parsley. Enjoy!
